GIGLIOCOOKING TUTORIAL *TAGLIOLINI WITH ARTICHOKES AND TOPINAMBUR CREAM* #tagliolini #recipe #gigliocooking RECIPE Ingredient for 4: 300 gr (10 oz) tagliolini Coarse salt ►Artichoke sauce: 6 artichokes, purple variety, well closed and tender 60 gr (2 oz) extra virgin olive oil 1 garlic clove, minced 1 tbs chopped parsley Salt Lemon juice ►Topinambur cream: 1 large topinambur or a few small once, total weigh 300 gr (10 oz) 15 gr (1/2 oz) extra virgin olive oil 1 small shallot 1 lt (4 cups) water salt ►Garnish: Shaving of Parmigiano Reggiano Fresh ground pepper ►Clean the artichokes, taking off the external tough leaves and peeling the heart. Cut off the tops; then cut them in halves. Remove the hair inside and slice them thinly. Keep them in a bowl of cold water and lemon. Prepare a large skillet with all the ingredients: extra virgin olive oil, garlic and parsley, the artichokes, previously squeezed from the soaking water, salt and a cup of clean water. Clean them covered with a lid for about 7-8 minutes (or until they are tender). ►Brush the topinambur under the current water and finish to peel it with a knife. Cut it in cubes about 1/2 inch for side. Peel and the shallot and slice it. Put the topinambur, the shallot, the olive oil and the salt in a pot with one liter of water. Put to boil and cook until they are tender. Put the whole mixture in a blender. If it is too loose, cook further to reduce. ►Cook the Tagliolini in plenty boiling salted water. Drain then and toss in the the artichokes sauce. Spoon some topinambur cream on 4 flat dishes. Place the twirled tagliolini upon.
