Video Description

@Boujeetexasbbq Smoked Brisket Esquites takes tender, smoky brisket and piles it high on creamy, cheesy, lime-loaded elote corn—topped with Cotija, cilantro, and yes, Hot Cheeto dust. Built on the OKJ Bronco, made to break the rules! 🤠 Recipe: Servings: 10–12 Prep: 1 hour | Cook: ~7 hours Brisket: 8 lb brisket flat 1/3 cup Cholula (binder) 1 ½ cups Tex-Mex rub (or Reserva’s Mexican BBQ Rub) Elote: 30 oz sweet corn 1 stick melted butter ½ cup mayo ¼ cup fresh lime juice 1 cup Cotija cheese ¼ cup chili powder 2 tbsp chopped cilantro Optional: Crushed Hot Cheetos, fresh lime, jalapeño The Cook: Trim brisket and apply hot sauce + rub. Smoke at 200–225ºF on OKJ Bronco with charcoal + mesquite wood for ~7 hrs. Spritz hourly after 4 hrs. Wrap with beef tallow once bark is set. Rest brisket until internal temp hits 150ºF. For the elote: mix corn, butter, mayo, lime juice, Cotija, chili powder, cilantro. Top with chopped brisket, extra Cotija, cilantro, lime, jalapeño & Hot Cheeto dust. #OKJ #Recipe #BBQ #Brisket
