  • 1/4 cup feta cheese, crumbled (optional)
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. 1In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper to make a dressing.
  2. 2Spread 1/4 cup of hummus evenly over each tortilla, leaving a small border around the edges.
  3. 3Layer mixed salad greens, shredded carrots, sliced bell peppers, cucumber, and red onion on top of the hummus.
  4. 4If using, sprinkle feta cheese over the vegetables.
  5. 5Drizzle the dressing over the layered vegetables.
  6. 6Carefully roll up each tortilla tightly, starting from one end and tucking in the sides as you go.
  7. 7Slice each wrap in half diagonally to serve.
  8. 8Serve immediately or wrap in foil for a portable snack.

Instructions

  6. 6Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top to form a wrap.
  7. 7Place the wraps seam-side down on the grill.
