Split pea pholourie with fresh mango chutney delicious any time of the day ( i had some at 11:30 pm :) as a snack. Ingredients 2 cups split pea, soaked in water overnight or for at least 4 hours 1/2 cup all purpose flour 1 tbsp turmeric and geerah 1 shallot or green scallions chopped Some garlic chives chopped Hot peppers 1 tbsp baking powder A little water to blend peas Some baby spinach (poi) leaves chopped Blend or pulse split peas with a little water to a fine smooth paste. Add chopped herbs to blend. In a bowl combine spices, baking powder, chopped spinach, salt and flour. Mix well and set aside. Fresh green mango chutney Green mangoes peeled 2 garlic cloves Hot pepper/s Salt Grate mangoes on fine grate. Don't grate the seeds ! Watch your fingers on the grater ! Grate the garlic cloves. Chop pepper/s very fine. Mix them together with salt to taste. Can be stored in up to a week in the fridge. Heat oil to a medium low heat and fry pholourie until golden brown. This pholourie mix cooks longer so, a medium low heat just the trick. If the heat is too high the outer parts will brown fast and insides will be half cooked. Bigger size balls will have the same results too. You can use your fingers to form balls or, like me, use a teaspoon dipped in oil. Drain on a paper towel or rack. Serve hot with mango chutney !
