Try this quick and easy fried tofu pan with a creamy and super delicious peanut coconut sauce and rice noodles. 🔥Sign up for our ultimate vegan meal prep course here: https://www.yes2lifeshow.com/the-ultimate-vegan-meal-prep-course Portions: 3 Macros Kcal/portion: 541 Protein/portion: 29 Fat/portion: 19 Carbs/portion: 64 Ingredients 1 onion 2 cloves of garlic 1-2 chilies 1 yellow bell pepper 1 block tofu (400 g) 200 g white rice noodles 200 g champignons 3 stalks of spring onion To make the sauce 1-2 tbsp peanut butter 1/2 cup coconut milk 1-2 tbsp soy sauce 1 tbsp rice vinegar, or lemon juice Water A pinch of salt Instructions 1. Wrap the tofu in a kitchen towel to get rid of the water. Then, cut into cubes. Boil the rice noodles in hot water for 3 minutes, rinse and set aside. 2. Chop the onion, mince the garlic and chili, dice the bell pepper, and slice the champignons and spring onions. 3. Prepare the sauce: mix all together in a bowl, stir well, season to taste. 4. Bring the pan to medium-high heat, add some oil, then fry the tofu for a few minutes until slightly brown. 5. Add the onion, garlic, and chili, stir and fry for around 5 minutes. 6. Add the bell pepper and mushrooms, stir, and add the sauce on top. 7. Pour the sauce on top, stir, and simmer for a few minutes. 8. Add the rice noodles and simmer until they absorbed the sauce. 9. Sprinkle spring onions on top. 10.
