Tex-Mex meets Italian in this soup, but the real star is the sour cream which puts this soup over the top. INGREDIENTS ========== 1 tbsp olive oil 1 onion, finely chopped 10oz (280g) ground meat 3 tbsp chili powder 2 tbsp paprika 1/2 tsp salt 1 14oz can tomatoes, crushed 1 14oz can black beans, rinsed & drained 5 cups chicken or beef stock 6oz (170g) pasta 1/2 cup sour cream 4oz (110g) cheddar cheese, grated DIRECTIONS ========= 1. Heat the olive oil on medium heat in a skillet. Add onion and cook, stirring occasionally, for 5-6 minutes. 2. Add ground meat, chili powder, paprika, and salt. Cook, stirring occasionally, for 8-10 minutes. 3. Add tomatoes, beans, stock, and pasta. Bring to a boil and fast simmer for 10-12 minutes - until pasta is al dente. 4. Stir in sour cream. 5.
