Full recipe: https://www.cozymeal.com/recipes/r/asparagus-stuffed-chicken Ingredients Servings: 4 8 oz asparagus 3 oz crumbled feta cheese 1/2 cup(s) grape tomatoes, halved 1 tbsp rice wine vinegar 5 tbsp extra-virgin olive oil, divided 4 large chicken breasts Salt and pepper, to taste Directions 11 Steps | 60 Minutes Step 1 First, preheat the oven to 350°F. Blanch the asparagus. Bring a pot of salted water to a boil and prepare a bowl of ice water. Once the water is boiling, add the asparagus and cook for about 2-3 minutes. Step 2 Next, transfer the asparagus to the ice water and let it cool for about 1-2 minutes. Step 3 Then cut the asparagus stems into small dice, keeping the 2-inch tips of the asparagus intact. Step 4 Now it is time to prepare the asparagus stuffing. In a large bowl, combine the prepared asparagus, crumbled feta cheese, halved grape tomatoes and rice wine vinegar. Mix these ingredients thoroughly and set aside. Step 5 Take the chicken breasts and season them with four tablespoons of extra-virgin olive oil, salt and pepper. Set them aside for now. Step 6 To sear the chicken breasts, lightly brush a cast iron grill pan with the remaining tablespoon of olive oil. Then heat the grill pan on high heat, until it is slightly smoking. Turn the heat to medium. Place the seasoned chicken breasts diagonally and presentation side down, onto the cast iron grill pan. Sear the chicken breasts for approximately 2-3 minutes. Step 7 Carefully rotate the chicken breasts to make crisscross grill lines on the side that will face up. Keep them on the same side and let them cook for 2-3 minutes. Step 8 Turn the chicken breasts over and cook for 1 minute. Take the chicken breasts off the heat and let them cool a bit. At this point, the chicken breasts won't be fully cooked yet. Step 9 Stuff the chicken breasts with the asparagus mix. Using a small knife, make a slit on the right side of the chicken breasts, but don't cut all the way through. This will make a space to put the asparagus mix in. Put the asparagus mix in the space until the chicken breast is full and a bit more. Make some of the asparagus tips stick out of the sides of the chicken. Step 10 To roast the asparagus-stuffed chicken breast, put the stuffed chicken breasts on a sheet pan and roast for about 25 minutes or until the middle of the chicken breast is 165°F on a digital thermometer. Step 11 Serve your asparagus-stuffed chicken immediately and enjoy!
