παπουτσακια Μελιτζάνες - eggplants with béchamel, stuffed and filled with Bolognese sauce and topped with a delicious béchamel creamy sauce, all baked in the oven to give a wonderful tasty Aubergine that are so soft, crunchy and crispy with cheesy and creamy béchamel sauce. A recipe that is modified to reduce all the fat and frying and give us a delicious taste, retraining the authentic recipe. The ingredients for our recipe are: / For the eggplants stuffing 1 kg of tomatoes, graded 2 large onions, chopped 50 ml of olive oil 750 gr of minced meat 50 ml of white vinegar (our white wine) 1 small spoon of; salt, black pepper, cinnamon 50 gr of parmesan cheese (or pecorino) 50 gr of fresh parsley, chopped Into a non stick pan with the oil we sauté the onion with the spices, then we add the meat and cook for 10 minutes, then add the vinegar and the tomato sauce and simmer for 10 minutes and turn of the heat, then add the graded cheese and the chopped parsley and mix well, set aside to fuse and cool down. / For the eggplants 1.5 kg of small to medium size eggplants 50 gr of parmesan cheese 50 ml of olive oil 1/2 lt of bechamel sauce (below is the link for the recipe) https://youtu.be/ORs3y4Le0No With a sharp knife, we cut through one side and boil in hot water for 5 - 7 minutes, till they are cooked but a bit hard, then we strain and set aside. Once dried, we place in a baking tray and stuff with the meat/tomato sauce, then pour over the bechamel and cover totally, sprinkle with graded parmesan, drizzle with olive oil and bake in a preheated oven at 185 C for about 45 - 55 minutes till they are golden in color, we serve and enjoy.
