Here's the Recipe 1 tablespoon neutral oil .5 medium onion, chopped 3 stalks celery, chopped 3 cloves garlic, minced 2 teaspoons fresh ginger, minced 1 teaspoon thyme 1 teaspoon rosemary .5 teaspoon fennel seeds 1 teaspoon turmeric (or more if you are adjusted to the flavor) Pepper to help the properties of turmeric be more bioavailable 1 14 ounce can of diced tomatoes 4-6 cups broth/water 1 medium/large sweet potato, cubed 1 cup chopped asparagus (fresh or frozen would work) 1.5 cups white beans, cooked 1 cup or 6 leaves of kale, ribs removed, chopped 1 14 ounce can coconut milk Toppings: Parsley, chopped Squeeze of fresh lemon Saute the onions until soft on medium high heat. Add garlic, ginger, celery and seasonings on medium heat. Saute until fragrant 1-2 minutes. Throw in the tomatoes. Scrape the bottom of the pan for any stuck on bits. Add broth/water. Add the sweet potato cubes and asparagus. Allow to come to a simmer and cook covered for 20-30 minutes. Add the white beans and kale. Cook for another 5 minutes. Taste for seasoning. Salt as needed. Top with parsley and add a squeeze of lemon juice. Enjoy!
