Wilson @cookinwithwilson Wild West BBQ Burger - Recipe 2 pounds ground beef or bison (80/20 blend recommended) - too lean and you'll get dried out burgers 1 large egg ¼ cup finely chopped sweet onion 2 cloves garlic, minced 2 tablespoons Worcestershire sauce 1 tablespoon spicy brown or Creole mustard 1 teaspoon smoked paprika 1 teaspoon chili powder ½ teaspoon onion powder ½ teaspoon garlic powder ½ teaspoon dried oregano ½ teaspoon dried thyme Salt and black pepper to taste 4 hamburger buns Thick-cut bacon slices Monterey Jack cheese slices Crispy onion straws Pickled jalapeños or pickles BBQ sauce Lettuce, tomato, and mayo for topping Directions Preheat your grill to medium-high heat. In a large mixing bowl, combine the ground beef, egg, chopped onion, minced garlic, Worcestershire sauce, spicy brown mustard, smoked paprika, chili powder, onion powder, garlic powder, dried oregano, dried thyme, salt, and black pepper. Mix well until all ingredients are evenly incorporated. Divide the meat mixture into equal portions and shape each portion into a patty, about ½ to ¾ inch thick. Use your thumb to make a slight indentation in the center of each patty. Place the burger patties on the preheated grill and cook for 4-5 minutes per side for medium-rare to medium doneness. While the burgers are cooking, grill the thick-cut bacon until crispy. During the last few minutes of grilling, add Monterey Jack cheese slices on top of each burger patty to melt. Lightly toast the hamburger buns on the grill until golden brown. Assemble the burgers by placing each patty on a toasted bun. Top with crispy bacon slices, a generous portion of onion straws, pickled jalapeños, and a drizzle of BBQ sauce. Add lettuce, tomato, and mayo to the top bun if desired, then place it on top of the burger.
