Mac and CheeseMacaroni Cheese

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes
  • 1 cup fresh mozzarella balls
  • 1/2 cup fresh basil leaves
  • 1/4 cup balsamic vinegar
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil

Instructions

  1. 1Place the chicken breasts in the bottom of the crockpot.
  2. 2Add the minced garlic, salt, black pepper, dried oregano, and dried basil over the chicken.
  3. 3Pour the balsamic vinegar over the chicken and spices.
  4. 4Add the cherry tomatoes on top of the chicken.
  5. 5Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours.
  6. 6About 30 minutes before serving, add the fresh mozzarella balls and basil leaves to the crockpot.
  7. 7Cover and continue cooking until the cheese is melted and bubbly.
  8. 8Once done, shred the chicken with two forks and mix everything together in the crockpot.
  9. 9Serve warm, garnished with additional fresh basil if desired.

  • 4 chicken thighs, bone-in and skin-on
  • 1/4 cup lemon juice
  • 1/4 cup chicken broth
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon, sliced
  • 2 tbsp olive oil

Instructions

  1. 1In a bowl, mix together lemon juice, chicken broth, minced garlic, oregano, thyme, salt, and pepper.
  2. 2Heat olive oil in a skillet over medium-high heat. Sear the chicken thighs for about 3-4 minutes on each side until golden brown.
  3. 3Transfer the seared chicken thighs to the crockpot.
  4. 4Pour the lemon juice mixture over the chicken thighs in the crockpot.
  5. 5Add lemon slices on top of the chicken.
  6. 6Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and tender.
  7. 7Once done, remove the chicken from the crockpot and let it rest for a few minutes before serving.
