‎ Madeleines are small cakes with a distinctive shell shape and small hump. These little buttery cakes are perfumed with a touch of lemon zest, *so* addictive especially when you have them fresh out of the oven! They are really simple to recreate at home, Dominique Ansel's recipe is my go-to and it just takes me back to a winter morning in Spring Street, New York City, queueing for freshly baked mini madeleines at his bakery. His recipe is readily available online, but also in his cookbook. He uses mini madeleine pans and bakes his madeleines for only 4 minutes. My madeleine size is much bigger (7.5cm) and I increased baking time to 11 minutes instead. The batter can be made ahead and stored in the refrigerator for up to 3 days. Pull them out and bake them fresh for your guests in a matter of minutes! _______________________________________________ 「 Tools 」 Madeleine pan Zester Spatula Piping bag 「 Ingredients 」 115g unsalted butter 15g dark brown sugar 15g honey 100g sugar 120g all-purpose flour 1g salt 4g baking powder 150g eggs (around 3), at room temperature ½ lemon grated lemon zest ½ orange grated orange zest (optional) As needed: Nonstick cooking spray or oil Confectioners’ sugar (for serving, optional) 「 Steps 」 - Melt butter, brown sugar, honey in a pot over low heat. - In a large bowl, combine sugar, salt, flour and baking powder. Mix well with a whisk. Form a well in the center, add eggs one by one, whisking to incorporate before adding the next. - Whisk in butter mixture. - Whisk in lemon and orange zest. - Batter will be sticky, similar in consistency to cake batter. Cover with plastic wrap (pressed onto surface of battery to prevent skin from forming). Let sit in fridge overnight to rest (this helps with rising and to get that bump/pearl) - Preheat oven to 175°C - Spray Madeleine pan with cooking spray or brush with oil - Spoon batter into a piping bag, and pipe onto oiled pan - Bake for 11 minutes until Madeleines are golden brown and center has set. (For a regular sized pan with madeleines measuring ~7.5cm. If making mini/smaller ones, bake for a shorter time) - Remove from oven and unmould immediately.
