Chorizo Breakfast Burrito https://youtu.be/hZAfYCr5yxQ Ingredients Potato Bread rolls 200g flour 40g butter 50g (½ a potato) boiled and mashed 1 egg yolk. 5-10g sugar (I use less because I think the sauce has some sweetness to it) 60g milk + 50g hot water (use the water you boiled the potatoes in as this has starch in) 1tsp yeast 1 tsp salt 1 egg to glaze rolls you could use milk. Smash Burger Sauce (The quantity will depend on how many people you are cooking for) Shake shack sauce is secret, but I reckon we are close. Mayo/yogurt (I use yogurt more than mayo in cooking as Healthier!) mustard (I use any mustard) Ketchup 2 tbs Gherkin juice 1 gherkin (Shake shack don’t add gherkins, but I like the texture, so I do) ½ tsp Garlic powder ½ Paprika (smoked) ½ Cayenne pepper ½ tsp onion powder Burger Iceberg lettuce 1 Tomato 1 slice American cheese per burger Salt and pepper (when cooking) Butter (I use garlic butter) to toast buns 2oz Beef (I use Beef from Homeplus looks like it has a good fat content 80/20 is the best ratio) French fried onion ½ Onion (I like red onion but you could use any) (depending on how many people) Milk (enough to cover onions) Flour (enough to coat onions) 1 tsp Cayenne 1 tsp Onion powder Pepper Salt after they are cooked Instructions. Potato Burger rolls 1. First, peel and cut up one potato and put it onto to boil. I add a little salt to the water. 2. Separate egg yolk and whisk it up. The whites I will use in another recipe. 3. When the potato is ready and soft drain the water but make sure you don’t throw away as we will use some of it in this recipe. The starch water will be great! 4. Measure out how many potatoes then mash it up and set it aside to cool. 5. In a large mixing bowl, measure out my dry ingredients, sugar, flour & salt. 6. Measure out some of the boiling water from the potatoes and add this to some milk. The temperature is lukewarm, which is perfect for me to add the yeast. 7. Mix the dry ingredients together then add other ingredients and mix until will incorporated before adding the next. The potato then egg and then milk/water and yeast. 8. Mix with a wooden spoon until your ingredients come together. Then switch to using your hand and knead and work your dough for about 5 min. It is a sticky dough, so keep it in the bowl as this is easier. 9. Once it has a good texture and is soft add the butter and continue working this into your dough. 10. Oil a large bowl, then place your dough inside. Cover with clingfilm and place in a warm area for about 1-2 hours or until your dough has risen. 11. Once the dough has doubled in size empty it onto a counter and divide it into your bread rolls. I usually make 4 but sometimes I will make 5. 12. Fold the outside of your dough into the middle turn over then using the sides of your palm, shape your ball. Place ball on baking. Don’t place them too close as they will rise a little more. 13. Flatten rolls with your hand then cover and allow to rest for 30min. Turn your oven on to start heating. 14. Cover the rolls with egg wash lightly and place into your oven at 180c for 20-30 min until golden brown. 15. Take them out of the oven and rest on a cooling rack until you are ready to use them. 16.
